Strawberries and Cream
Dissolve one LARGE box of sugar free strawberry Jell-O (strawberry is just my favorite) in two cups of boiling water.
Pour into a bowl add one 8 oz pkg softened strawberry cream
cheese and beat well. You can use any flavor. Refrigerate
till firm. You can top any fruit with this. Or scoop onto
another Jell-O made without the cream cheese. The taste is
just great!



FLOURLESS CREPES
Crepes:

1 large egg
1 Tbsp heavy cream
1 tsp oil
¼ tsp sugar substitute (adjust to taste)
1/8 tsp vanilla

Mix well. This will make two crepes. Put in a well buttered no stick
frying pan and swirl to coat pan cook at medium til top looks dry and flip
for a few seconds. Put in a plate, add your favorite filling and roll up
and enjoy.

Ricotta Filling: (this is one I use A LOT)

1/3 cup ricotta cheese
1 pkg sugar substitute

Mix well. This will fill both crepes.
